Primitivo – Southern Italy’s fruit-driven signature

Primitivo is primarily grown in Puglia in southern Italy, where the heat and sun provide optimal ripening conditions. The name comes from the Latin “primo”, meaning “first”, as the grape ripens early in the season. Primitivo is genetically related to Zinfandel, and therefore shares many of the same flavor characteristics, but with a distinct southern Italian signature. At Vinhanen We work with producers who prioritize low yields and gentle vinification, resulting in wines with depth, structure and elegance – not just pure fruit and alcohol.

Flavor profile and structure of Primitivo

Primitivo is typically full-bodied, warm and fruity. You’ll find notes of black cherries, blackberries, dried fruit, cloves and chocolate. The acidity is moderate, but the tannin structure is often silky – making the wines suitable for both direct serving and some aging. The alcohol percentage is often above 13,5%, which enhances the warmth and intensity.

Different styles and appellations

There are several expressions for Primitivo. The most famous is Primitivo di Manduria DOC – known for its concentration and body. Another is Gioia del Colle DOC, which is often a little lighter and more elegant. The wines range from rustic and fruit-driven to complex barrel-aged versions with great depth. Many of our wines carry the IGT designation from Puglia, which gives the winemaker greater freedom to experiment with expression and style.

Primitivo is a wine that calls for powerful dishes. Its warmth, fullness and dark fruit make it an ideal companion to meats, simmered dishes and strong cheeses. Primitivo is a crowd favorite especially in the fall and winter, but it can also be a hit with grilled summer food.

Primitivo for game and braised meats

Dishes with game such as deer, roe deer or wild boar go excellently with Primitivo – especially when there are berries, thyme or mushrooms in the dish. The round structure and dark fruit notes play perfectly against the intensity of the game flavour.

Perfect wine for duck and pig

Try Primitivo with duck and orange, or with slow-roasted pork with thyme and root vegetables. The wine's acidity and sweet fruit balance the fattiness of the meat and create a harmonious whole.

Cheeses and simmered dishes with character

Mature cheeses like Pecorino, Gorgonzola or firm goat cheese are obvious matches. The same goes for simmered dishes with beef, lamb or beans – preferably with tomato, red wine or meat juices as a base. For Italian-inspired comfort food, Primitivo is inevitable.

Yes – genetically speaking, Primitivo and Zinfandel are identical grapes. However, since Primitivo is typically grown in Italy and Zinfandel in the United States, particularly California, the wines take on different expressions. Primitivo is often more earthy and spicy, while Zinfandel can be juicier and more alcoholic.

Primitivo is perfect with hearty meat dishes such as duck, game and braised pork. It also works well with mature cheeses and vegetarian dishes with mushrooms, tomatoes and herbs. The wine's dark fruit, spice and body provide a solid structure that balances complex dishes beautifully.

Serve Primitivo at 16–18 °C. Young wines can be decanted for 30–60 minutes to soften tannins and open up the aromas. Wine in the Keykeg is served directly at the optimal temperature – an advantage for restaurants and bars that want consistent quality glass after glass.

Yes – most Primitivo wines can be aged for 3–5 years, and the best versions (especially those with barrel ageing) can develop positively for up to 8–10 years. Under stable conditions (12–15°C, dark and lying flat) the wine will develop more complexity and soft tannins. Bottles with high extract and alcohol age best.
